Description

New and simple version of carrot cake.   Moist and fragrant, it's great as a part of your lunch box or as a dessert with your favourite tea.

Ingredients

    eggs
  • 1
    c
    sugar
  • 1
    c
    flour
  • 1
    tbsp
    vanilla sugar
  • 1
    tbsp
    cinnamon
  • 2
    tsp
    baking powder
  • 1⁄2
    c
    oil
  • 2
    c
    grated carrot
Instructions

Method::

Grease baking loaf tin and cover the bottom with a baking parchment.   Wisk eggs with sugar, vanilla sugar, oil and cinnamon.   Add flour sifted with baking powder.   Mix in grated carrot.   Transfer the mixture into a prepared baking tin and bake in the oven on 180 C for 45-50 min.    Remove from the tin on a cooling rack and peel off the paper from the bottom of the loaf.   Enjoy!

Notes

You can cover it with icing if you wish but I like it plane, as it's fragrant and tasty enough without it.
